Didi MercierIn 1987, with children at her feet, Dorothy “Didi” Mercier decided to try her hand at Fine Pastries. She spent long hours studying techniques from the Masters, winning the applause of friends and family for her delicious desserts.

Armed with samples of her work and an intuitive sense of her studied craft, Didi joined acclaimed Lehigh Valley caterer Maison Blanc as Head Pastry Chef and continued refining her talent for flavors on the professional level.

More success followed. TV celebrity Master Chef Tell Erhardt brought Didi on board when he opened his Bucks County restaurant, The Harrow Inn. As Head Pastry Chef, she was given free rein to develop her own creative style of pastries.

Next, Didi built her own commercial kitchen and patisserie, Pastry by Dorothy Mercier, selling to many of the best restaurants around Philadelphia and receiving notice and awards for her wonderful creations.

In 2010, after completing the Professional Chocolatier Program at Ecole Chocolate, Didi saw that she could merge her pastry experience with the techniques of the Chocolatier. She began creating new all-natural filled chocolate confections — combining the all-time favorite flavors people love.
